Directions for Use
Makes approximately 20 large shells or 30 small shells
500g Macaron Mix
120ml Water (50-55°C) including colouring
Preheat
Preheat oven to 150°C
Mix
In a mixing bowl, combine the pack mix with water and colouring (total weight of 120ml). Mix on low speed for 1 minute. Scrape down the sides. Mix on medium speed for 4 minutes. Gently hand-fold for 1 additional minute. Pipe onto trays using a round nozzle. Firmly tap the tray on the bench a few times to release air bubbles. Use a toothpick to pop any surface bubbles. Allow to stand for 20 minutes until a skin has formed and the batter has lost its shine.
Bake
Bake at 150°C for 12-15 minutes in fan forced oven.
Note: Baking times may vary depending on your oven. Use a stand mixer with paddle attachment for best results.
Fill
Allow to cool. Fill with buttercream or ganache.
Storage conditions
Store below 25°C in a cool, dry place. Keep away from direct sunlight.
